Corn is extremely high in zeaxanthin and lutein, which are antioxidant carotenoids, that can help in the neutralization of free radicals, which as we know, cause cancer. Corn is also a great source of clean sweeping fiber, and it contains a great ratio of insoluble to soluble fiber. According to scientific research, corn has the ability to support the growth of friendly bacteria in the large intestines. Friendly bacteria will facilitate good digestion, and it will keep the human immune system healthy and strong. Corn contains vitamin C, which boosts our immune system, manganese, which has the ability to regulate our blood sugar, and protein and vitamin B, which boost our energy.

Why organic corn?

25 years ago there were no genetically modified corn crops in the United States, and now, more than 70 percent of the corn crops are genetically modified. There are crops that are genetically modified to be tolerant to herbicides, so farmers can spray them without the risk of damaging them. Other crops are designed to be immune and resistant to insects. This is done by introducing a toxic protein, that can kill certain insects when they bite the corn. The problem with the genetically modified corn is that it is relatively new, and only a small amount of studies have been conducted to determine the effects that it has on the human health. When the scientists genetically modified corn, they have done that by modifying the existent and creating new proteins. The problem is that our body does not have the ability to quickly adapt and recognize these proteins. It is a well-known fact that protein is the basis for food allergies, and therefore some scientists speculate that genetically modified corn causes more allergic reactions than its organic counterpart.

That is why it is strongly recommended to stick to organic corn, which can be easily found at the farmer’s market.

Cheesy popcorn – The recipe


  • A quarter cup of un-popped organic corn kernels
  • One and a half tablespoons of grapeseed oil
  • One eight teaspoons of sea salt
  • One teaspoon of nutritional yeast

How to prepare it:

Pop the corn kernels on the stove or in an air popper, and then drizzle with grapeseed oil, nutritional yeast, sea salt, and toss until the popcorns are coated.
